Sourdough, rye or hoagie? A field guide to our six breads

When we build a new sandwich, we pick the bread before anything else. The wrong bread can make a great filling taste flat or fall apart in your hands. The right one makes the whole thing click.

All six of our breads come from a family bakery in Northside and arrive before 6 am. Here is how we think about each one, so you can build your own stack with confidence.

Sourdough

Our workhorse. A naturally leavened loaf with an open crumb, a tangy flavor and a crust that toasts into a shatter. It holds up to heavy, wet fillings like chili and melted cheese without going soggy, which is why it anchors the Five-Way Melt and the Triple Grilled Cheese.

Best with: anything griddled, melted or saucy. Vegan as baked.

Seeded rye

Dense, slightly sour and packed with caraway. Rye has a strong personality, so it pairs with strong fillings: peppered pastrami, sauerkraut, sharp mustard. It is the classic deli bread for a reason.

Best with: cured meats, Swiss, pickled things.

Hoagie roll

A long roll with a thin, crackly crust and a soft, slightly chewy middle. The hinge cut holds a lot of filling without spilling, which makes it ideal for the Queen City Italian and the Brisket Dip. It is also sturdy enough to dunk in jus.

Best with: layered cold cuts, dips, cheesesteaks. Vegan as baked.

Brioche

Rich with butter and egg, soft and slightly sweet. Brioche balances smoky, salty and spicy fillings, which is why pulled pork on brioche is such a good match. It toasts golden fast, so we watch it closely.

Best with: barbecue, fried chicken, French toast. Contains milk and egg.

Buttermilk biscuit

Technically not bread, and technically the reason we exist. Our biscuits are laminated with cold butter so they split into flaky layers, and they are baked in each shop every morning. They are for breakfast stacks only.

Best with: goetta, eggs, pepper jelly. Contains milk.

Gluten-free

A soft sandwich loaf made with rice and sorghum flours. We toast it in a separate pan with clean utensils. It is available on any item marked GF for $2, though our kitchens handle wheat flour and we cannot promise zero cross-contact.
