Cold Stacks
Thin-sliced deli meats, sharp cheeses and crisp vegetables on bread baked that morning. Built to travel and still taste great at 2 pm.

Cold cuts, stacked right
Cold sandwiches live or die on slicing. We run the slicer on the thinnest setting so the meat folds into ribbons, which stacks taller and eats softer than thick slabs. Lettuce is shredded, tomatoes are salted, and onions are shaved so nothing slides out on the first bite.
Cold Stacks are the backbone of our boxed lunches because they hold up. We build them with a moisture barrier of cheese or spread against the bread, so they are still sharp when your 1 pm meeting finally starts at 1:20.
Travels well
Holds its crunch for up to 4 hours refrigerated, which is why offices order them by the box.
Local bread
Sourdough, rye and hoagies delivered warm every morning at 5:30.

How we build it
- 1
Slice thin
Meats go through the slicer at 1 mm and fold into ribbons for height.
- 2
Build a barrier
Cheese or spread against the bread keeps moisture out.
- 3
Layer by weight
Heaviest ingredients at the bottom so the stack stays upright.
- 4
Wrap tight
Butcher paper and a center cut, ready to travel up to 4 hours chilled.
