The supporting cast
Our fries are cut from Ohio-grown russets, soaked, blanched and fried twice for a shatter-crisp shell. Pickle fries are spears from our own brine, dipped in cornmeal batter and served with ranch we make in the shop.
Two soups rotate daily. Tomato bisque is always on, and the second changes: chicken and dumpling on Mondays, chili on Thursdays, and a chef's pick the rest of the week.

Cut and soak
Russets are hand-cut and soaked 2 hours to pull out starch.

Blanch
First fry at 325 degrees to cook the center through.

Second fry at 375 degrees right when you order.

Sea salt goes on within seconds so it actually sticks.

The fries contain no gluten and are fried in a dedicated fryer. Our kitchens do handle wheat flour, so people with celiac disease should use caution.
Tomato bisque is always available. Mondays are chicken and dumpling, Thursdays are chili, and other days are a chef's pick posted on our Instagram at 10 am.
